A Totally Rad Friends and Family Dinner Series

We are less than a week away from the first chef collaboration of the Totally Rad Friends and Family Dinner Series! The dinner series will be five nights with five unique chef collaborations. Each night will be a totally different experience with each chef combining their knowledge and a playlist to create something Totally Rad. Beau Vondra is the architect of the series and it combines the two things he does better than anyone; Fun and Family!!

Our Pledge

We are proud to announce that we will be donating a portion of the proceeds of the Dinner Series to The Salt Cure Restaurant Recovery Fund! We started these Chef collaborations with our friends and neighbors in mind. We have neighbors in need and doing nothing has never been what Fernson is about.

The Salt Cure Restaurant Recovery Fund is an act of preservation. Our restaurant community is at a critical moment. We are here to help preserve the heart of Minnesota's food culture, serving those that serve us.

Night One - February 9

The first night of the series will be Monday February 9th at Fernson Downtown; we are so happy to welcome Erik Sather into our space! Erik is the owner/operator of Lowry Hill Provisions in Northeast Minneapolis. His connection to good food started early on in life. He grew up on a farm in southern MN, before working his way “north” to Minneapolis. Through years of cooking in some of Minneapolis’ best restaurants, Erik continued his passion for a connection to the source of his ingredients, and being involved in as much of the process as possible.

Adjusting his world from restaurants, to retail meats, to his salumaria has been a process of passion, luck, and community. Erik lives in Minneapolis with his wife and two kids, along with a couple dogs, a cat and 5 chickens.

Food, family, and friends are most important to me in life, it’s a good thing they go together so nicely.

Lowry Hill Provisions, formed in 2023, is based out of Northeast Minneapolis and regionally sources clean, all natural heritage pork, Lowry Hill Provisions focuses on a pork-forward flavor profile salami with low acidity and a delicate but coarse texture. Creatively selected flavor bouquets, hand trimmed pork, and handtied salami make their salami like no other, and provide a noticeable difference in character, flavor and quality.

Erik Sather and Beau Vondra have cooked up a unique menu and vibe for the night! It’s all about friendship, family, and community at Totally Rad. The full menu planned includes cold courses, hot apps, mains, and desserts.

Caesar Salad: Romaine, Caesar Dressing, Soft Boiled Eggs, Boquerones, Salt and Vinegar Potato Chips

Lowry Hill Salumi: Focaccia, Whipped Butter, Pickled Things

Pigs in a Blanket: Morty Dogs, Croissant Dough, Giardinara

Calabrian Pork Toast: Milk Bread, Calabrian Sausage, Soffrito, Hot Honey, Whipped Ricotta, Basil

Frito Misto: Green Beans, Onions, Fennel, Tempura, Preserved Lemon, Lemon Aioli

Main Course

Roast Chicken: Honey, Rosemary, Parsley

Porchetta: Smoked, Fennel, Garlic, Lemon, Chili Flakes

Collard Greens: Ham Hock, Lemon, Chicken Stock, Pecorino, Grilled Focaccia

Rainbow Carrots: MN’Duja Butter, Gremolata

Polenta: Browned Butter, Point Reyes Toma

Crispy Rice Salad: Lowry Hill Salami, Italian Nuoc Chom, Herbs, Pistachio

The Totally Rad Dinner Series will be five nights of good vibes and great food from midwest chefs. Tickets are limited for these five truly unique experiences unlike anything else in Sioux Falls! These will be special nights at Fernson Downtown!!
